Depends on the season - this past winter saw several plates with a pile of mashed potatoes in the center, with strips of skillet browned kielbasa along the side from top to bottom (about 1/4 hunk cut into 1/4's longways), then topped with warmed sauerkraut. Other times it's shrimp (always have some frozen) simmered with white beans, garlic, & olive oil, or with pasta, garlic, olive oil & lemon zest.
The laziest of all, though, is carry out from the work place cafeteria...and sometimes it's not so bad.

If I'm only slightly lazy and there is some preparation involved, I'll make hummus.
If I'm being incredibly lazy, I'll eat cheese and crackers (I like Bleu cheese with the peach preserves I made last summer), some olives and capers with chilli flakes and thyme and a salad with olive oil and balsamic. The first two items are usually eaten standing at the fridge.

Speaking of lazy dinners, here's a good one for the grill; I bought 4 huge scallops and a few jumbo shrimp, brushed them with olive oil and sprinkled with salt and pepper. They only take a few minutes on each side. While I was shopping at Weiland's, I bough a pretty good ready-made mango salsa in the produce section, and just put the scallops & shrimp on top. Easy peasy appetizer to munch on while you're waiting for dinner to grill.

| One of my favorite quick meals is the frozen Trader Joe's Fettucini Alfredo. I'll add some sauteed bell peppers and some extra parmesan, and it is a great meal in under 10 minutes! You could also add some chicken breast and whatever other veggies you have. Good way to clean out the produce drawer!

My fave lazy meal is instant noodles (beef-flavoured from the asian grocery), topped with a soft poached egg and chopped green onions. Cook the noodles in a big pot of water, when it's almost done poach your egg right over the noodles. I make the soup base right in a bowl so it's more concentrated and then put everything in when it's done.
Alternatively, I like making pasta with bacon and creamy sauce (sub evap milk) and and throw in any leftover things in the fridge that might go with it (spinach, artichoke, chicken, peppers, shrimp)

| A nice bag of Chili Picante CornNuts, a package of Laura Chenel's Chevre goat cheese and a Comfest mug of Lipton green tea get me through the night. Having to actually brew the tea is a pain though.
