Not my recipe (got it from a buddy) but I've made it a few times, and it's a winner.

1 chicken, cut up (I usually use one whole boneless breast per person)
3 tablespoons olive oil (as needed)
4 cloves garlic, minced
1 large onion, chopped
1 large sweet red pepper, diced (I usually use one sweet red pepper per
whole chicken breast)
1 or 2 hot green chili peppers, finely minced, or 1/8 to 1/4 teaspoon
crushed red pepper (to taste)
4 ounces diced ham or prosciutto (I use 4 ozs per whole chicken breast, and I usually trim off any fat)
1 cup diced fresh or canned tomatoes (Romas work best, in my opinion)
Salt and pepper to taste (I go easy on the pepper)

In large skillet, cook chicken in hot oil until lightly browned on all
sides. Remove chicken and add garlic, onion, sweet and hot peppers, and ham to the skillet.

Cook, stirring occasionally, until onion and sweet pepper are softened.
Return chicken pieces to pan, embedding them in the vegetables. Add
tomatoes and seasonings.

Cover and cook over low heat until chicken is very tender, about 1 hour.

Serve over Basmati rice.

that sounds really good! I'll have to give it a try sometime. I bet it smells incredible when it's cooking.
